Minted Cucumber Nojitos

"This recipe comes from a Grilling magazine. They are non-alcoholic mojitos. My DD wants to have them for her graduation party so I am putting it here so I can fidget with servings. We haven't tried it yet. The Simple Syrup recipe is in the body of the drink recipe."

  • In a large pitcher combine lemon and lime juice.
  • Add mint leaves and Simple Syrup.
  • Using a muddler or the back of a spoon crush leaves and stir together well.
  • Add cucumber slices and ice cubes.
  • Pout lemonade and club soda into pitches.
  • Serve immediately.
  • SIMPLE SYRUP RECIPE.
  • 1 cup water.
  • 1 cup sugar.
  • In a small saucepan combine water and sugar.
  • Bring to a boil over medium heat, stirring until sugar dissolves.
  • Cook until the mixture is completely clear and the surface is covered with bubbles.
  • Remove from heat.
  • Allow to cool.
  • Transfer to a container.
  • Store, tightly covered, in the refrigerator for up to 2 weeks.
