ingredients
- 2 ripe bananas
- 1⁄4 cup sugar
- 1⁄4 cup brown sugar
- 1 egg
- 1 1⁄4 cups whole wheat flour
- 2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 4 ounces applesauce
- 1 tablespoon water
- 1 teaspoon cinnamon
directions
- Preheat oven to 375 degrees.
- Mush bananas and combine with all the other ingredients. Spoon batter into greased muffin cups and bake for 13-15 minutes.

These muffins were a beautiful treat for a chilly fall afternoon! I used 1/2c. brown sugar and added in a bit of vanilla extract. After they had been in the oven for 2min I placed walnut halves on each one (I made 12 reg muffins, not mini muffins). They look gorgeous and taste even better - and best of all, they were so easy to make. I'll be making these again - soon!

A bonanza of bananas from our school cafeteria sent me in search of healthy minded recipes to use this fruit. Made these in an instant and they were gone from the office pantry just as fast. I used 1/4 cup of brown sugar Splenda in lieu of both the white and brown sugar. Also skipped the water as the batter seemed rather moist without. The results were wonderful moist and tender. They were plenty sweet so I may cut back on sugar depending on the fruit. With my changes, these were 3 for 2 WW points.
