Milk Cake

"This was the first-prize winner in 1988, but I have lost the information of where it was first prize! I do know the cake is very good. It is by someone named Helen Hubbard. "Be sure and put the baking powder in last-that's important. Otherwise the cake doesn't rise properly", says Helen Hubbard."

directions

  • Preheat oven to 350 degrees. Thoroughly grease a 9 or 10 inch tube pan. Heat the milk and butter together in a saucepan until the butter is melted and the mixture is lukewarm. In a large bowl, beat the eggs until foamy. Add the sugar gradually, as you beat, and beat until light and fluffy. Add the milk-butter mixture. Add the flour and beat well, and then beat in the vanilla and salt. Last of all, beat in the baking powder.
  • Pour and scrape the batter into the pan. Bake 45 minutes, or until a toothpick inserted in the center comes out clean. Cool on rack.
