- 1 1⁄2 cups coconut, flaked sweetened
- 1⁄2 cup Splenda sugar substitute
- 1⁄4 cup all-purpose flour
- 1⁄4 teaspoon salt
- 3 egg whites, at room temperature
- 1⁄2 teaspoon vanilla extract
- 1⁄2 teaspoon almond extract
directions
- Preheat oven to 325°F.
- Line cookie sheets with parchment paper.
- In medium bowl,combine coconut, splenda, flour and salt using a wooden spoon.
- Stir in egg whites and extracts until blended.
- Drop in tablespoon size portions on prepared cookie sheets.
- Bake for 15-20 minutes until golden brown.
- Move parchmant paper to cooling rack and cool.
