Mexican Rice and Beef

"Adapted from my grocer's flyer on 5 ingredient meals. I've added a few of my own. I didn't drain the black beans, and found it to be a little too liquidy for my taste, so next time I'll be draining the beans."

  • Heat beef or Morningstar Farms crumbles in large skillet over medium high heat until cooked through.
  • Add water, rice and chili powder. Bring to a boil. Lower heat, cover and simmer for about 10 minutes.
  • Stir in salsa, black beans and corn. Cover and simmer for about 8 minutes.
  • Add cheese, cover and heat through, about 3 more minutes.

  1. i loved the taste of it once it finally finished cooking. i cooked it according to the directions given, but at the end of the time it was still liquidy. had to let it simmer for about 20 more minutes before the rice was fully cooked and the fluids absorbed. other than it was a hit with my family.
