Mediterranean Bean and Sweet Potato Stew

"As we try to eat healthier, I have been adapting more of my favorites to be low fat and chock full of veges. My husband was skeptical on this one but gave it a "10" once he tasted it."

  • Soak beans over night.
  • Cook beans 1 hour or until just barely soft.
  • Saute onions, garlic and spices in olive oil until soft and fragrant.
  • Add remaining ingredients except pepper flakes.
  • Add part of the pepper flakes.
  • Simmer for 40-60 minutes.
  • Taste after 20 minutes and add more pepper flakes as needed but be sure to wait to taste before you add more.

I am a dog trainer and owner of a boarding kennel in North Carolina. I also breed train and compete with my German Shepherds. In my spare time I love to try new recipes or invent/adapt recipes to make new dishes. I love to bake yeast breads from scratch and keep sourdough starter on hand. I am trying to eat healthier and I use very, very few preprocessed foods. I hate the amount of salt in most processed foods as well as the lack of fiber and other essential nutrients.
