Matt Murphy's Baked Beans

"The very same bake beans that are served along with pan fried breakfast sausage, mashed potatoes and sour cream down at Matt Murphy's Pub (in Brookline, Mass.)   • Soak the beans in water overnight.
  • Drain.
  • In a large Dutch oven, sweat** the onion, celery, sage and thyme in the butter.
  • Add the drained beans, fennel and coriander seeds, red wine, honey, molasses, tomato paste and chicken stock.
  • Add water until beans are covered.
  • Preheat oven to 350°F.
  • On stove top, bring bean mixture to a boil.
  • When mixture boils, remove Dutch oven from stove and place in preheated 350°F oven.
  • Bake, stirring often for at least 6 hours, adding additional water as needed.
  • When beans are done, stir in vinegar, salt and pepper to taste.
  • **sweat=cooking vegetables slowly, over low heat in a small amount of fat to release their moisture, flavor and to have them look translucent.

  1. Yes I did like the flavour of these beans, but I did add a couple of drops of tobasco to it. As it is very hot here I actually cooked this recipe in the microwave oven, didn't want to add to the heat already in the kitchen. I sweated the veges on high with a lid for 3 mins on high then added everything put on high for 20 mins then cooked it on 50% power for 3-1/2 hours approx. I did have to add extra stock to the dish twice in that time. I also used treacle which I gather is the same as molasses and used extra treacle instead of honey and I think it turned out well not too sweet. But if you like sweet beans use the honey. I served it with a ham steak and mashed potatoes.
