- 24 ounces Simply Potatoes Traditional Mashed Potatoes
- 1 large yam, boiled, drained and mashed
- 4 eggs
- 1⁄4 cup small curd cottage cheese
- 4 ounces goat cheese, softened
- 1⁄8 cup butter, softened
- 1 teaspoon salt
- 1⁄2 teaspoon pepper
- 1⁄2 teaspoon ground nutmeg
- 4 green onions, sliced finely
- 1⁄4 red bell pepper, chopped finely
- 4 slices bacon, cooked crisply and crumbled
directions
- Preheat oven to 450 degrees.
- Grease muffin tins.
- Bring yams to a boil, reduce heat and cook until soft - 15-20 minutes.
- Meanwhile, cook bacon until crisp, blot grease from bacon and crumble finely, set aside.
- In a small bowl use a hand mixer to blend eggs, cottage cheese, goat cheese, butter, salt, pepper and nutmeg.
- Beat until mixture is creamy and smooth, set aside.
- Prepare Simply Potatoes Traditional Mashed according to package instructions.
- Combine Simply Potatoes with yams and stir mixture over low heat for a few minutes to let any excess liquid cook off.
- Stir green onions, red bell pepper and bacon into potato mixture and mix well.
- Pour egg mixture into potatoes and stir by hand until thoroughly blended.
- Spoon mixture into muffin tins, 3/4 full.
- Bake at 450 for 25 minutes, until golden brown.
- Let stand for 5 minutes, serve with sour cream if desired.

This recipe sounded so delicious that we just had to try it! We cooked the yam in the microwave as well. We did not cook the pepper and onions but just added them raw and substituted fontina for the goat cheese because that's what we had on hand. The potato puffs turned out perfect! They have a rich flavor and were supremely satisfying. My husband and I brought them to our friends' home for dinner and they went very well with the pot roast. We are so impressed with how easily the ingredients can be altered to taste and what you have on hand. We will definitely make these again!

I cooked the yam in the microwave,sliced, pulled the peel off and then mashed. I also cooked the bacon, green onions, red pepper together, lifted out with small slotted spoon. I did not have goat cheese, substituted provalone cheese chopped. I shortened the time in prep and cooking.<br/>by ten minutes. I am high altitude so baking time is shorter. I enjoyed. Double wrap and freeze.<br/>for any leftovers.
