DIRECTIONS

  • Peel or scrub the potatoes and cut into 25mm cubes. Boil in salted water for 4 minutes. Drain and allow them to cool. Place the potatoes in a bowl and sprinkle over the masala spices and the olive oil. Mix until fully coated.
  • Place the potatoes on a tray and bake in the oven at 220 degC for 25 minutes turning as required.
