Mary Berry Cheese Scones: a Cheesy Delight for Tea Time

- 225 g self-raising flour
- 1 teaspoon baking powder
- 1⁄2 teaspoon cayenne pepper
- 50 g cold butter, diced
- 100 g Mature cheddar cheese, grated
- 150 ml milk
- 1 large egg, beaten (for egg wash)

- Preheat your oven to 220°C/200°C fan/gas mark 7. Lightly grease a baking sheet or line it with parchment paper.
- In a large mixing bowl, sift the self-raising flour and baking powder. Add the cayenne pepper and mix well.
- Rub the cold diced butter into the flour mixture using your fingertips until it resembles fine breadcrumbs.
- Stir in 75g of the grated cheddar cheese, reserving the rest for later.
- Make a well in the center of the mixture and pour in the milk. Mix gently until the dough comes together. Be careful not to overwork the dough.
- Turn the dough out onto a floured surface and knead it lightly for a few seconds. Pat it down to about 2cm thickness.
- Use a 5cm round cutter to cut out the scones. Place them on the prepared baking sheet, leaving a bit of space between each scone.
- Brush the tops of the scones with beaten egg wash and sprinkle the remaining grated cheddar cheese on top.
- Bake the scones in the preheated oven for about 12-15 minutes or until they turn golden brown and rise beautifully.
- Once baked, transfer the scones to a wire rack to cool slightly. Serve warm with butter or your favorite chutney.
