  • Preheat your oven to 220°C/200°C fan/gas mark 7. Lightly grease a baking sheet or line it with parchment paper.
  • In a large mixing bowl, sift the self-raising flour and baking powder. Add the cayenne pepper and mix well.
  • Rub the cold diced butter into the flour mixture using your fingertips until it resembles fine breadcrumbs.
  • Stir in 75g of the grated cheddar cheese, reserving the rest for later.
  • Make a well in the center of the mixture and pour in the milk. Mix gently until the dough comes together. Be careful not to overwork the dough.
  • Turn the dough out onto a floured surface and knead it lightly for a few seconds. Pat it down to about 2cm thickness.
  • Use a 5cm round cutter to cut out the scones. Place them on the prepared baking sheet, leaving a bit of space between each scone.
  • Brush the tops of the scones with beaten egg wash and sprinkle the remaining grated cheddar cheese on top.
  • Bake the scones in the preheated oven for about 12-15 minutes or until they turn golden brown and rise beautifully.
  • Once baked, transfer the scones to a wire rack to cool slightly. Serve warm with butter or your favorite chutney.
