  • No method given but judging from the ingredients rather like a rich fruit cake :beat fats and sugar, add eggs; sift flour spice and raising ingredients, then add with fruit and cook in a slow oven (150C - probably around 2 hours but needs experimentation). Alternatively possibly rub fats into sifted flour/spice mix and then add eggs, fruit and buttermilk to produce the required dropping consistency.

  1. What a great loaf this recipe made Coasty. It was a little challenging because of the way it was written. I halved the recipe and got two small tea loafs. Wasn't sure what spices to use so I went with Cinnamon, Nutmeg, Allspice & Cardamom. For the dried fruit I used a mixture of raisins, currants, candied ginger, candied orange peel, dried cantaloupe and dried mixed berries. I baked the loafs at 300 for 1 hour. Wow was this flavorful. I loved it...ate both loafs by myself. It was even better the next day. Perfect toasted and served with a little margarine. Thanks for sharing this treat that I will make again and again. Made for Pac. :)

Recently relocated to Queensland, warmer seas for sailing and fishing. Aside from cooking for my family I do cake decorating (mainly wedding cakes) and recently unusual jams - adding spices and herb - and preserves and cheese making
