- 8 manicotti
- 2 eggs
- 2 cups cottage cheese
- 1⁄2 cup parmesan cheese, grated
- 1 tablespoon parsley flakes
- 1⁄2 teaspoon salt
- 1⁄8 teaspoon ground pepper
- 1 tablespoon onion, minced
- 2 tablespoons cooking oil
- 1 lb ground beef
- 1⁄2 cup onion, finely chopped
- 1⁄4 teaspoon garlic powder
- 1⁄2 teaspoon salt
- 2 (7 1/2 ounce) cans tomato sauce
- 2 tablespoons parmesan cheese, grated
directions
- Cook manicotti as directed on package. Rinse with cold water; drain.
- Combine cottage cheese, eggs and Parmesan cheese, stirring well. Add parsley, salt, pepper and onion. Using teaspoon, stuff shells with mixture.
- Heat oil in frying pan, add beef, onions, garlic and salt. Scramble fry until brown. Remove from heat; stir in tomato sauce.
- Pour half the meat sauce into 9x12 - inch pan. Arrange manicotti over top. Spoon second half of meat sauce over shells. Sprinkle with Parmesan.
- Bake, uncovered, in 350F oven for 45 minutes.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
