- 6 cups rolled oats (quick or regular)
- 1 cup brown sugar
- 1⁄2 cup sugar substitute (like Splenda)
- 4 teaspoons cinnamon
- 4 teaspoons baking powder
- 4 teaspoons vanilla extract
- 2 teaspoons salt
- 2 cups milk (can substitute, soy, rice, etc.)
- 4 eggs
directions
- Preheat oven to 375.
- In a large bowl mix oats, brown sugar, cinnamon, baking powder, and salt.
- In a separate bowl beat eggs, milk, and vanilla extract.
- Mix all together.
- Spread into a greased 9x13 inch pan or baking dish.
- Bake for approximately 40 minutes or until firm to touch.
- *You can add a cup of raisins or dried cranberries if you like.
