  • 12 lb thickly sliced bacon
  • 3 scallions, roots and green parts removed, sliced into 1/8-inch slices
  • 1 (8 ounce) package sliced white mushrooms
  • 14 cup sliced almonds
  • salt and pepper

  • Cook bacon in large skillet over med heat for 4 min per side until crisp. Remove bacon to paper towels and drain most of the fat, leaving just enough to coat the bottom of the skillet.
  • Add scallions and cook for 1 minute.
  • Add mushrooms and almonds to the skillet and cook, stirring, for 5 min or until mushrooms soften.
  • Distribute mushrooms to serving plates and crumble bacon over each serving.
  • Season with salt and pepper.
