- 4 cups riced cauliflower (frozen)
- 4 ounces neufchatel cheese
- 1 jalapeno (minced)
- 3 sweet peppers (different colors, diced)
- 1 tablespoon stevia
- 2 teaspoons salt
- 2 tablespoons vinegar
- 1 tablespoon lime juice
- 1 tablespoon cilantro (fresh, chopped)
- 4 chicken breasts (grilled and diced)
- 1 head butter lettuce
- 1⁄2 teaspoon garlic powder
- 1 teaspoon onion powder
- 1⁄4 teaspoon black pepper
directions
- Saute diced peppers, minced jalapeno, frozen riced cauliflower, diced grilled chicken, spices, vinegar, and lime juice, until vegetables are tender.
- Stir in neufchatel cheese to warm mix, until fully incorporated.
- Stir in chopped cilantro.
- Serve a spoon full of the filling in a washed butter lettuce leaf, topped with salsa, guacamole, sour cream, shredded cheese, etc.
