  • Add a gallon of water to loomi in a non-reactive pan. Bring to a boil, simmer for 5 minutes, turn off burner and cool. (I put a lid on the pot).
  • Strain and then add the sugar. Let sugar dissolve at room temperature.
  • Stir, taste for sugar and chill.
  • Serve chilled with ice cubes.
  • Note: You can also leave the loomi soaking in the gallon of water overnight. In the morning, bring to a boil, turn heat off and strain and add sugar. But the recipe above can be used when making it in a hurry.
  • Also, crush the loomi into small pieces using a mortar and pestle. This brings out the flavor and sourness.

Interesting.I didn't think I would like this when it was cooking as it had a strong medicinal smell to it.I was pleasantly surprised when I tasted it!I actually drank it unsweetened and found it to be agreeably sour.It reminded me of agua de jamaica,but you can definitely tell it's made with limes as all the essential oils from the rind steeps into the drink.It was a little strong,maybe not for everybody,but I'll definitely be making this again.
     
  2. Interesting. I've been looking for more ways to use my dried limes. This wasn't bitter but it was sour. (pucker up!) I added more sugar and eh, still could use more. It will definitely get drunk. I will probably add more sugar. We're thinking of using it in margaritas, lol. (please don't be offended). I think it will strain well through a fine wire meshed colander. Made for ZWT9, Mike & the Appliance Killers.

  4. 3 1/2 stars. I liked the idea and taste if it hadn't been so bitter. I used black loomi. I think they are stronger. I did add a lot of extra sweetener for which I used honey to be more healthy. I then searched and found the website this was originally posted on, http://bad-girls-kitchen.blogspot.com. There the original poster talks of black loomi but uses white. I think it should be specified to use white in this. Also I strained it through a cheese cloth which is essential to remove the small bits that will only make it stronger and bitty, this was mentioned in the original post as well. I am the mother of three, wife of one :) My teenager is the pickiest eater in the world, while my 3 year old will eat anything (though has been acting more and more fickle lately). Our newest addition was born in June 2008, so she doesn't really know much in the way of varieties of food. My husband says "I don't care what you fix, as long as it has meat in it."
