Lobster Salad (British Virgin Islands -- Caribbean)

  • In a large bowl with a cover, mix together the lobster, cucumber, onion, celery & bell pepper, then season to taste with salt & pepper.
  • In a small bowl, whisk together the mayo, lime juice & hot pepper sauce, then pour this over the lobster mixture & toss carefully to combine.
  • Cover & chill in the refrigerator for at least 1 hour.
  • When ready, serve the lobster salad over a bed of salad greens & garnish with lemon slices.

  1. I used the imitation lobster. I skipped the onions and used red peppers. We enjoyed this . I think nest time I will cut back on the cukes just a tad I did find they overwhelmed the lobster just a bit. Made for Gimme 5
     
  2. Oh my goodness, this was such a delicious salad...and what a treat to have lobster. I served it with a chilled bottle of champagne, and it was a very pleasant meal.   3. Simple and delicious. I added 2 sprigs of tarragon, and used 1 teaspoon of mayo and added 1/4 cup of olive oil to make it healthier.
     
  4. Oh My Syd. This is a winner. I loved the cukes in this and the lime is a wonderful change. I made as is except I left out the green peppers, they don't like me so much. I used 1/2 regular mayo and 1/2 light mayo to reduce the fat a little. I think you could make this will all light mayo and it would still taste good and creamy. Served for dinner with some crackers. I think next time I might throw in some cooked pasta and see how that turns out too. Thanks for posting.
     
  5. This was yummy on tostadas! I had four packages of frozen lobster meat just waiting to find their purpose, and this was it. I used a diced jalapeno in place of the green bell pepper because I don't like green bell pepper, and I used two packets of True Lime instead of juice in the dressing because I was fresh out of limes. Because DH is such a chile-head, my parents are always gifting us with random bottles of hot sauce, so I happened to have a little bottle of Jamaican Pickapeppa Hot Red Pepper Sauce hanging out in the pantry -- perfect for my Caribbean lobster salad! DH, of course, added quite a bit more of it to his own serving, because two dashes just wasn't enough for him lol. We really liked the cuke in this -- we enjoy all sorts of seafood salads year-round, but the cucumber was the thing that made this salad really different for us. We'll definitely be enjoying this again sometime. Thanks for posting! Please excuse the odd yellow tinge to the posted photo, apparently the lighting in my kitchen at night is atrocious for photography. Made for ZWT5 Caribbean.
