Salad
- 3 cups bow tie pasta, uncooked (or any other pasta)
- 1 1⁄2 cups cucumbers, chopped
- 3⁄4 cup feta cheese, crumbled
- 1⁄4 cup red onion, coarsely chopped
- 1⁄4 cup kalamata olive, sliced
- 12 cherry tomatoes, halved
- 1⁄4 teaspoon black pepper, freshly ground

Dressing
- 1⁄4 cup fresh lemon juice
- 1 1⁄2 tablespoons olive oil
- 2 -4 garlic, minced
- 1 teaspoon dried oregano
- 1⁄4 teaspoon black pepper, freshly ground
- 1⁄8 teaspoon salt
directions
- In a pot of boiling water, cook pasta. Drain and rinse under cold water. Drain; place in a large bowl.
- While pasta is cooking. Chop up the cucumber, feta cheese, red onion, olives and cherry tomatoes. Add the pepper.
- Dressing: In a small jar with lid, combine lemon juice, olive oil, garlic, oregano, salt and pepper. Shake well to incorporate.
- Add to salad and combine. Chill for 2 hours.

I didn't realize that I forgot to rate this! I was looking through my recipe reviews for this and couldn't find it. I made this months ago and absolutely love it! I can't even remember the changes I made to it, but there were a few. I will definitely have to remake this and give a better review! Sorry!
