Lime-Zested Grilled Chicken

- 1⁄2 cup fresh lime juice
- 2 teaspoons freshly grated lime peel
- 3 garlic cloves
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 4 (5 -6 ounce) chicken breasts
- 1 lime, thinly sliced
directions
- Combine lime juice, lime peel, garlic, oregano, thyme and pepper to taste. Pour over chicken breasts in a large bowl, turning the chicken to coat. Refrigerate for at least 4 hours, turning every so often.
- Preheat grill to medium (300º-350º). Remove chicken from marinade. If you wish to use the marinade as a sauce, boil it in a saucepan first.
- Place chicken on grill, on direct heat until grill marks appear, about 10-12 minutes each side.
- Remove and let stand for at least 5 minutes. Serve with lime slices.
