  • To cook potatoes: peel and cut into 1/2 inch pieces. Put into pot of water; before boiling drain water amd refill to one inch above potatoes and add 1 tsp salt. Bring to boil and simmer for about 5-8 mins until just barely tender. Drain and put immediately back into hot pot and cover. Let sit while you make the dressing.
  • Mix other ingredients and toss with warm potatoes. Chill and serve.
