ingredients
- 1 cup brown sugar
- 1 cup white sugar
- 1 cup lard
- 2 cups oatmeal
- 1 cup coconut
- 3 eggs
- 2 1⁄2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1⁄4 teaspoon salt
directions
- Mix ingredients together.
- Form into balls.
- Flatten balls.
- Bake at 350 degrees Fahrenheit for about 10 minutes.

These were great and everyone loved them, and we were all shocked at how big they got! I got almost 3 dozen out of them and in about 24 hours they were all gone. I did add in about a cup of raisins (something in me just has to have raisins with oatmeal) and they baked perfect. Thanks again for posting!

Made these as part of a cookie tray destined for the office and they were a big hit. The cookies are big soft and chewy with a great balance between the coconut and oatmeal. My half batch yielded about 18 3-inch cookies. The larger cookie required about 12 minutes of baking. I replaced the lard with shortnening which is a better match than butter. Thanks for posting this great recipe.
