ingredients
- 2⁄3 cup shredded coconut
- 1 cup walnuts, chopped
- 2 cups rolled oats
- 1 cup brown sugar
- 2⁄3 cup all-bran cereal
- 3⁄4 cup cooked lentils, pureed
- 1 egg, lightly beaten
- 1⁄2 cup oil
directions
- Preheat oven to 350°F
- In mixing bowl, combine coconut, walnuts, rolled oats, brown sugar.
- and cereal. Add lentil puree, oil and egg. Mix just until dry ingredients are.
- moistened. Spread into 10X15 inch cookie sheet which has been sprayed with non-stick spray. Place oven rack in center of oven; bake 30 minutes or until lightly browned. Cut while still warm into 2 inch squares.

Tasty- does not say what kind of lentils, so used red, as that's what I had. Also used 1/4 cup applesauce for 1/4 cup of the oil. Substituted pecans for the walnuts, as we have that kind of tree in our yard and so plenty of those. Sprinkled 1/3 cup mini chocolate morsels and spread over the top while still warm. The edges were crisp and the inner squares not quite done enough - will cook longer next time, but will make again.Reply
