Lemony Grilled Asparagus

"I was having a cookout and had gotten a great deal on Asparugus (which I love). Since I always squeeze lemon on mine I thought I'd try umphing the lemon flavor and came up with this. Had 3 lbs of asparagus for 6 people and let me tell you there was not a piece left. Everyone wanted the recipe. Delicious! Note: Can be made on either a stovetop grill pan or BBQ grill."

  • Wash asparagus and cut off woody bottoms. Wash and scrub the lemons since will be using the zest. Using a microplaner or fine grater zest the lemons. Be careful to only get the yellow skin and not the white part underneath as it is bitter. Cut lemons in half and juice. Drizzle the asparagus with olive oil and about 1/2 the lemon juice. Toss to coat well. Grill, turning often until grill marks appear and slightly soft. Just before serving drizzle with a little more lemon juice to taste and if you wish, a little more olive oil. Sprinkle with lemon zest and course sea salt to taste.
