  • Add the sugar and lemon zest to a medium bowl.
  • Add the eggs and whip with an electric mixer for 4-5 minutes—the mixture should be thick and pale.
  • Add the extracts and lemon juice and mix to combine.
  • Sift the flour, baking powder and salt into the egg mixture and mix until just a few streaks of flour are left.
  • Pour in the poppy seeds and butter. Mix to combine.
  • Chill the mixture and the madeleine pan for 45 minutes-1 hour.
  • Spray the pan with non-stick baking spray and dust with one tablespoon of flour. Tap out the excess.
  • Place about one tablespoon of batter into the molds and bake for 8-10 minutes.
