Layered Salad

- 2 (10 ounce) bags prewashed lettuce
- 1 (16 ounce) box frozen peas
- 1 1⁄2 cups mayonnaise (Hellmann's)
- 8 slices bacon, cooked to a crisp and crumbled
- 2 cups shredded cheese (Monterey Jack or mild cheddar is best)
- 1⁄2 purple onion, chopped
directions
- Defrost peas according to the directions on the box.
- Place the 1/2 of the washed lettuce in a large bowl.
- Spread 1/2 of the mayonnaise over the lettuce.
- Cover with a layer of 1/2 bacon, 1/2 of cheese, 1/2 of the peas, and 1/2 of the onion.
- Repeat steps two, three, and four.
- Refrigerate for two hours.
- Toss salad before serving.

This is an outstanding salad. I wanted a salad for Thanksgiving dinner, but not a tossed salad, I wanted something a little different. I made this up the day before Thanksgiving and let the flavors blend. Lots of compliments on this one, even from my Dad, who had 2 servings. I'm eating the leftovers with soup as I type this. The red onion is key, IMO. Will definitely make this again, thanks for posting!
