  • 6 large egg yolks
  • 14 cup sugar
  • 1 pinch salt
  • 2 cups milk, scalded
  • 5 tablespoons lavender honey
  • edible lavender flowers, for garnish

  • Beat the egg yolks stiff with the sugar and salt.
  • Add the milk in a slow, steady stream. Stir in the honey.
  • Cook the mixture lightly.
  • Cool. Chill. Freeze. Garnish.
