Kiwi - Watermelon Margarita Slush

"In one of my other recipe posts (Twisted Mad Mex Style Spinach and Portabello Burrito) I referenced a little restaurant that I LOVED back in my Pittsburgh college days. I used to go there often for Happy Hour...Half price drinks and appetizers. My favorite was a Frozen Kiwi Margarita. Over the years, I have moved away from loving sweet & sour frozen drinks, but I have created my own version of this Margarita that is light and refreshing...and brings back those memories of Mad Mex."

  • Make Lime Infused Simple Syrup:.
  • Bring 1 Cup Water to a boil and add Sugar. Stir until sugar dissolves and remove from heat. Stir in juice and zest of one lime. Cool in refrigerator for 2-4 hours.
  • Make Watermelon Ice Cubes:.
  • Place Watermelon and 1/2 cup of the Lime Infused Simple Syrup into a blender. Liquefy and pour into 2 ice cube trays. Freeze until firm -- about 4 hours.
  • To make the Margarita:.
  • Add the Watermelon Cubes, Kiwi Cubes, Tequila, Orange Liquer, and Juice of the second lime into a blender. Blend until the desired consistency. I actually like it to be less frozen than a typical Margarita or Daquiri. I also like to do this in batches as to not overload the blender.
  • Serve in pretty glasses rimmed with coarse salt. Garnish with a splash of sparkling wine and kiwi slices.
