Key Lime Margarita Cupcakes With Key Lime Frosting

"As my mother and I were testing out cupcake recipes for our cupcake shop we tweeked a recipe to fit our needs. You can actually make any flavor of alcoholic cupcake you like just by changing the mixer that goes into both the frosting and the batter. You might even try Pina Coloda or Long Island Ice Tea. Have fun with these."

  • Directions:.
  • Preheat oven to 350 degrees F and grease cupcake pans.
  • • In a large mixing bowl beat together butter and sugar until fluffy. Add oil and eggs 1 at a time.
  • • In a separate mixing bowl combine flour, salt, baking soda, and baking powder.
  • • To large mixing bowl add margarita mix and flour alternately, beginning and ending with flour.
  • • Fill cupcake pans ¾ full on each cup and bake for 28-30 minute.
  • For frosting:.
  • In a large mixing bowl combine softened butter, cream cheese, lime zest and juice, and vanilla. Add powdered sugar ½ cup at a time until frosting is a decent consistency.
  • After cupcakes have cooled frost and serve.

Three of which are very active, so I need meals that are quick and easy. My kids will try anything, so I cook everything. I LOVE TO COOK! I believe you should start your kids out early trying new cuisines and exotic foods, that way later on in life they aren't so picky.
