DIRECTIONS

  • Season chicken breasts with salt and pepper.
  • Lightly grease a baking dish with cooking spray.
  • Place the chicken in the baking dish, then add a 1/3 of the BBQ sauce and rub it inches.
  • Place pineapple chunks over the dish and add the remaining BBQ sauce.
  • Cover with plastic wrap and refrigerate for 30 minutes to 2 hours.
  • When ready pre-heat oven to 400°F.
  • Remove the plastic wrap and drizzle olive oil all over the top.
  • Bake uncovered for 40 minutes or until chicken reaches internal temperature of 185°F.
  • Remove from oven and serve.
