Jungle Colada from Elephant Bar

"This is the best pina colada I've ever had. If you are in KC go there and taste it. It's wonderful."

• Ingredients: 10
• Serves: 1

ingredients

• 1 teaspoon coconut
• 1 ounce pineapple juice
• 1 1⁄4 cups scoop vanilla ice cream
• ice
• 5 ounces pina colada nonalcoholic drink mix
• 1 ounce whalers dark rum

• Garnishes

• raspberry puree
• whipped cream
• maraschino cherry
• toasted coconut

directions

1. Blend ice, coconut, pineapple juice, ice cream, pina colada mix, and rum.
2. Blend until smooth.
3. Swirl raspberry puree in line in glass.
4. Pour in drink.
5. Top with garnishes.

GUILT!!!!!! But Oh so GOOD! I blended fresh raspberries for the puree without sugar. What a great dessert! We did enjoy and I can`t imagine anyone not liking it. Thanks for the extra pounds!;)

Oh this was fun Dienia. I made this for our challenge and it was a heavenly dessert. These could be quite addictive. I had a couple tonight and boy can I feel the rum. I'm ready for bed and I will sleep well. This is one for the books...a great party drink

This was SO good! I had all the ingredients for this on hand, so whipped one up yesterday evening for my husband and myself. We split one as it wasn't too long before dinner and I didn't want to fill up on ice cream. Afer I made it I was sorry I hadn't made two! This is a wonderful drink, and you could leave out the rum for nonalcoholic version and it would be just as good. I used my little hand held instant blender and it worked great with a lot less cleanup than a regular blender.Thanks Dienia for sharing this great recipe.
