- 2 tablespoons granulated sugar
- 2 1⁄2 tablespoons baking powder
- 1⁄2 teaspoon sea salt
- 1⁄2 teaspoon cinnamon
- 4 eggs, separated
- 3 1⁄2 cups milk
- 1⁄2 cup butter, melted
- 1⁄2 cup unsweetened applesauce
- 1 teaspoon vanilla extract
directions
- In a medium bowl, mix together flour, sugar, baking powder, sea salt, and cinnamon. Set aside.
- Preheat a waffle maker to medium heat.
- Separate egg whites from yolks. Make sure to save both parts of the egg.
- Put whites in the bowl of your standing mixer and beat on high ntil stiff peaks form.
- Transfer beaten egg whites to a bowl and set aside in the refrigerator.
- Add egg yolks and butter to the bowl of your standing mixer and mix on medium speed until combined.
- Add milk, applesauce, and vanilla extract and beat until combined.
- Add half of the dry ingredients and beat until combined.
- Repeat with remaining dry ingredients.
- Add beaten egg whites and fold into the batter by hand with a spatula.
- Spray waffle maker lightly with non stick cooking spray and scoop 1 cup of batter into the center of the waffle plates. **I don't use cooking spray. I save my butter wrappers when they are used--something my Mom did and use those to grease everything.
- Cook on medium heat for 3 to 5 minutes or until the waffles are golden brown.
- Repeat with remaining batter until it has all been used.
- To keep warm, preheat oven to warm setting and put each batch of waffles on a large baking sheet in the warm oven until ready to serve.
- Serve with warm maple syrup, whipped cream, fresh berries, etc.

I love to try new recipes, and this is a wonderful site to find new additions. I rarely make the same thing twice because it's so much fun to try something different. My life long dream is to travel the world and eat my way around it.
