- 3 lbs red potatoes, pealed, cubed
- 2 teaspoons salt
- 7 hardboiled egg, chopped
- 3⁄4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon red wine vinegar
- 1⁄4 teaspoon celery salt
- 3 tablespoons gherkins, minced
- 2 tablespoons sweet pickles, minced
- 3 tablespoons red onions, minced
- 6 -7 radishes, halved and sliced thin
- 1⁄4 teaspoon pepper
directions
- Boil potatoes in water and 2 teaspoons salt until fork tender.
- Mix mayo, Dijon, vinegar, celery salt, and pepper in large bowl.
- Stir in gherkin, pickle, onion, and radish.
- Fold in eggs and drained warm potatoes to bowl.
- Serve warm or chill for a few hours and serve cold. I like it warm.
