ingredients
- 1 lb Italian sausage, grilled and chopped
- 1 large onion, chopped
- 1 stalk celery, chopped
- 1 small zucchini, chopped
- 3 large chicken bouillon cubes (makes 6 cups)
- 1 (28 ounce) can diced tomatoes, undrained
- 2 garlic cloves, minced
- 1 teaspoon salt
- 2 cups dry lentils, rinsed
- black pepper
- red pepper
- basil
- oregano
- parsley
- thyme
directions
- Combine all ingredients in stock pot.
- Simmer for 1 hour or until vegetables and lentils are tender.
- Enjoy!

Tell your dad that we think it is fantastic too!! I was short 1/2 cup of lentils but I don't think it that affected the taste at all. Here is what I did for the spices no black pepper, 1 teaspoon crushed red pepper, 2 teaspoons basil, 2 teaspoon oregano, 2 tablespoons parsley and 2 teaspoons french thyme. I thought those amounts were perfect for us. I will be making this one many times in the future!! Thank you for sharing. Made for *Zaar Cookbook Tag July 2009* game
