Ila, Bert and Dylan's Cashew Chicken

"This is a really good easy dinner - prep time includes marindate time. Not really sure who to give credit for this recipe too. Ila or Bert make it and it is Dylan's favorite dinner, so all can get credit now."

  • Mix together all marinade items together. Cut the chicken into cubes and marinate in the mix for 1-4 hours.
  • Place oil in wok on medium heat and add chicken, browning it. Set aside. Cut green peppers, onion and green onions into 1 inch pieces.
  • Stir fry onions in the wok until getting clear then add the green pepper (cooking slightly) and the salt and pepper to taste. Add the chicken and cashews cooking just long enough to heat.
  • Serve over hot rice.

  1. I loved this! I added some fresh broccoli and some carrots to add color, but otherwise I left it just the way it was posted. I wasn't sure if I was supposed to discard the marinade or add some to the dish to make a sauce, so I boiled my marinade on the stove top, added some cornstarch, and added about half after everything had cooked so my rice would have a little sauce. Perfect dinner for after work....thanks for sharing!
     
  2. This was truly delicious! Move over, takeout joint! I made the marinade as directed, and used only 3/4 lb chicken. I then added a stalk or so of celery and about 2 cups fresh broccoli, both of which were added to the pan with the onions. I wasn't sure if the marinade was meant to be added to the pan or discarded, but we like lots of sauce so I added it to the pan with the chicken and let it boil for a good while as the chicken cooked. The chicken didn't brown as quickly as if I had sauteed it, but I was glad to have the extra "sauce" for my veggies. I also used only 1/2 c roasted salted cashews, which was just enough for us. Thanks so much for posting...this is truly a keeper! Made for Top Favorites of 2009 tag, and I can see why it made the list!
     
  3. This was indeed an easy and delicious dinner, especially since I did all the prep work earlier in the day and just put it together at night, the longest part to make was the rice, lol! I chose to use shrimp rather than chicken, I marinated the shrimp as directed, but did not pre-cook it as you would the chicken, I simply added it in step 3 and let it cook through then. I used one green AND one red pepper, since we like them and it added some lovely colour! I served this with Recipe #380852 Very much enjoyed, thank you! made for I Recommend Tag game.
     
  4. De-e-elicious! I used regular cashews and 2 breasts. I also added cut up celery and used a red pepper. Wonderful taste. Made for Holiday Tag Game 2009.
     
  5. Absolutely wonderful! Great flavors and loved the crunch of the cashews. I used plain, unsalted cashews. Not too spicy. Better than the last take-out version I had :)

This is a family cookbook by the Hill Family. It all started with Charlie and Mary Hill. They had 7 children; Bruce, Francis, Howard, Charlie, Mignon, Joe and Sarah. Food and cooking was a big part of Charlie and Mary's lives and has been a big part of their childrens lives as well. Francis's Poem The Hill Clan even talks about it. The Hill Clan When we were growing up, there was plenty, Seven kids to feed, that was too many. Dad, I remember you always worked hard. And when it came to gambling, you were a card. Mom, you were always in the kitchen, Cooking, baking and making decisions. What to do with one pound of hamburger, to feed seven, And you always did, Oh thank heaven!!! Bruce and I were always elected to do the dishes, And we always did, with Dad's best wishes. Howard and Charlie were on the run, The rest of us prayed they would never get a gun. Mom, Mignon always hung in there by your knee, You couldn't even take time to pee. Then, there was Joe, we couldn't figure where he came from, The baker, the milkman, or some bum. Sarah Ann, we thought she was the best, She turned out to be the biggest mess. Mary wrote this poem for that occasion and read it before the cake was cut. And to come from a very large family that came many miles, To wish us both the best of luck, with a kiss, a hug, and a smile. We wonder how we can be so lucky to have all our children, grandchildren and great grandchildren here, We hold them all so very dear. Thrown in are also recipes from Mary's sister and niece. The Hill clan produced lots of good cooks and even more good eaters. Mary also wrote this poem about her 50 years of marriage and boy was she right about more grandchildren and greatgrandchildren to come. 50 Years It has been 50 years since I was caught. Charlie chased me down and we tied the knot. With a family of seven, it took alot of living. But more then that, lots of forgiving. We had four boys and three girls, And I'm happy to say, they are still with us up to this day. Nineteen grandchildren and five great, I am sure there will be more, after this date. We done our part for posterity, I think that's the way it's supposed to be. There will always be room for more.
