  • Preheat oven to 400. In large saucepan, add potatoes and enough water to over (add salt to water, if desired). Bring to boil and cook about 15 mins, or until tender. Drain and mash in large bowl.
  • While the potatoes are boiling, in a medium skillet, melt butter. add onion and cook until clear, about 7 minutes add to mashed potatoes. add beef to skillet and cook over medium-high heat until just pink, about 5 minutes add the beef, sour cream and horseradish to the mashed potatoes and onions. season with salt and pepper.
  • on floured sheet of parchment, roll 1 sheet of puff pastry into 11X15. spread half of the potato/beef mixture in the middle, covering 2/3 of surface, leave 1-in edge along the long sides. fold in long sides and starting from a short side, roll up to like a burrito. turn seam side down on a parchment-paper-lined baking sheet, and brush on the beaten egg/water mixture. repeat to make another with remaining ingredients. bake until golden, about 30 minutes let cool before slicing and serving.
