  • Preheat oven to 350. Grease two 8 1/2 x 4 1/2 inch loaf pans.
  • Cream together butter and 1/2 cup honey. Mix in egg.
  • In a separate bowl, blend flour, ginger, baking soda, and cinnamon.
  • In a third bowl, blend remaining honey with boiling water.
  • Use mixer to blend creamed honey and 1/3 dry ingredients, then 1/3 wet ingredients, alternating until all dry and wet ingredients are added.
  • Turn into pans, bake until a toothpick inserted into the center comes out clean, approximately 40-50 minutes. Serve with Honey Whipped Cream.

  1. Very good! More of a spice cake than a classic ginger bread, but matches in texture and moisture (yum!). I doubled the ginger, added a pinch of nutmeg, cardamom and cloves, and topped with lemon sauce (it didn't need it but I love lemon sauce). Thanks for this recipe.

I also earned a Masters in Public Health degree in 2013. After a Walt Disney World trip in Dec 2006 where I had to rent an electric scooter because I couldn't manage the walking, I decided to have gastric bypass surgery, which was done Feb 28, 2007. I lost 160 lbs (though I've gained back about 60 of that since). I can't eat as much as I used to, so I want every bite to be extra good!
