Holiday Eight-Layer Bars

  • 1 cup chopped hazelnuts
  • 1 (9 ounce) package chocolate wafer cookies
  • 2 tablespoons sugar
  • 12 cup butter, melted
  • 1 (11 ounce) package peanut butter and milk chocolate chips
  • 1 (12 ounce) package semi-sweet chocolate chips
  • 2 cups sweetened flaked coconut
  • 1 (14 ounce) can sweetened condensed milk
  • 12 cup red and green M&M's plain chocolate candy

  • Preheat oven to 350 degrees F.
  • Spread nuts over ungreased baking sheet;bake until lightly browned,3-4 minutes.
  • Cool.
  • Line 13 by 9-inch baking pan with heavy-duty foil; coat with cooking spray.
  • In food processor process cookies and sugar until fine crumbs form; stir in butter.
  • Press into bottom of pan.
  • Sprinkle with peanut butter and milk chocolate chips, then semi-sweet chips; sprinkle with nuts, then half of coconut.
  • Pour milk over coconut; sprinkle with remaining coconut.
  • Bake 25-30 minutes or until chocolate is melted and coconut is toasted.
  • Immediately sprinkle with M&Ms; press to adhere.
  • Cool completely in pan.
  • Refrigerate until cold, 2 hours; cut into bars.

  1. Thank you for this recipe. I made these the other night, because I thought they sounded awesome. I did leave out the hazelnuts, because my family does not care for them. I also subbed 1 1/2C chocolate graham crackers for the oreos, which tasted great. The M&Ms would NOT stick and the coconut remained soggy. I tried baking these an additional 7 minutes in an attempt to toast the coconut, but in the end gave up and decided "it was as done as it was going to get.". The flavor is good, but the soggy-ness is a bit overpowering. I'll make them again (with careful attention to spreading the sweetened condensed milk and a few other tweaks), as I think they have great potential!

I am a busy single mom of 5 growing boys!! My children's ages are 21,18,14,12 and 10 1/2. In my spare time,when I have any, I try to walk 3 miles a day.I like to read Woman's World and inspirational books and if I didn't have 5 beautiful boys to care for, I would probably be doing missionary work. I live in the beautiful Okanagan Valley in British Columbia and I swear we must be living in Heaven on earth!!!I would love to travel if I had the resources and time with Brazil and South America being on the top of my list of places to see.
