Hoisin Chicken Sandwich

- 4 boneless skinless chicken breasts
- 4 onion sandwich buns

Sauce
- 1⁄4 cup honey
- 1⁄4 cup soy sauce
- 1⁄2 cup hoisin sauce
- 1 garlic clove
- 1⁄4 teaspoon ginger
- 1⁄4 teaspoon dry mustard

Toppings
- 1⁄4 cup shredded cabbage (to taste)
- 2 tablespoons green onions, sliced (to taste)
- 1 tablespoon mayonnaise (to taste)
- 1 tablespoon hoisin sauce (to taste)
directions
- Cut chicken breasts into strips and set aside.
- Mix together all sauce ingredients thoroughly and marinate chicken for at least 2 hours.
- Drain chicken, reserving marinade. Grill for 10 minutes, basting with marinade.
- Grill buns at the same time chicken is grilling.
- You can also choose to stir fry the chicken and cooking time will decrease significantly, and simply toast the buns under the broiler.
- Put the chicken on the onion buns and add desired toppings. Good served with your favorite coleslaw.

This takes chicken sandwiches to a whole different level. I couldn't bare to throw away the marinade so I cooked it really well until it was fairly thick and spooned that on the buns. (unfortunately I didn't have any onion rolls- but the hamburger buns worked perfectly!) The chicken breasts were enormous so I only used two and it was enough to feed the three of us plus a little extra for tomorrows lunch. I really enjoyed this unique sandwich!

I am a native Californian, born in the Los
Angeles area, college in far northern California and now living in southern part of the San Francisco Bay Area.
I love kids and animals. I am an active volunteer at my two teenage daughters' high school as well as a Girl Scout leader. We have two guinea pigs, one Dalmatian, one cockatiel, and one quarter-horse to keep us busy. I had a career as a marketing writer before I became a full-time mom and volunteer, but I still write all the time as well as participate in a monthly book club.
I stay active and have Jazzercized for over 25 years on a regular basis. I also am trying to do some yoga now and ride horses for fun.
I have loved getting involved in the RecipeZaar games and learning how to post the photos. I am currently playing on the Zaar World Tour and it is lots of fun!
Have been a sports fan since childhood and definitely have enjoyed getting to know about hockey since we have a very successful NHL franchise in our area: Go Sharks!
