- 1 teaspoon sugar
- 1⁄2 teaspoon ground ginger
- 3 tablespoons soy sauce
- 2 garlic cloves (minced)
- 1 cup walnuts
- 2 large boneless skinless chicken breasts
- 3 tablespoons peanut oil
- 1 (8 ounce) can bamboo shoots, drained
- 1 tablespoon cornstarch
- 1 cup water
- hot cooked rice
directions
- Cut chicken breasts into bite-size pieces.
- Combine sugar, ginger, soy sauce, and garlic in bowl.
- Mix in chicken and let stand 20 minutes, stirring occasionally.
- Heat oil in wok on high heat.
- Add walnuts, stir fry for 1 minute, then remove walnuts from wok and set aside.
- Add marinated chicken mixture to hot oil. Cook 5 minutes, stirring occasionally.
- Mix in bamboo shoots.
- Blend cornstarch and water and add to wok, stirring until thick.
- Simmer 2 minutes longer, then mix in walnuts.
- Serve over rice.
