Healthy "creamy" Broccoli Soup

- 1 tablespoon extra virgin olive oil
- 1 large yellow onion, quartered
- 3 1⁄2 cups water
- 3 cups broccoli, cut into large chunks
- 1 teaspoon salt
- 1 tablespoon black pepper
- 10 g glucomannan
- 2 garlic cloves, minced
directions
- In large pot, heat oil to medium. Add onion and cook for 15 min., until soft. Add water, broccoli, salt and pepper. Cook for 20 min., until broccoli is tender.
- Transfer soup to food processor. Add Glucomannan and garlic. Blend until creamy. Let sit for a few minutes to cool slightly before eating.
