ingredients
- 2 cups dried baby lima beans
- 1⁄2 cup dried red beans
- 1⁄2 cup dried white bean
- 24 ounces tomato juice
- 1 1⁄2 tablespoons sugar
- 1⁄4 cup brown sugar
- 1 1⁄2 cups onions, chopped
- 1 lb ground beef
- 1 tablespoon liquid smoke
- 3 tablespoons vinegar
- 1⁄4 teaspoon allspice
- 1⁄4 teaspoon clove
- 1⁄2 teaspoon dry mustard
- 1 teaspoon red pepper
- 2 teaspoons salt
- 2 tablespoons apple cider vinegar
- 1⁄3 cup sugar-free syrup
- 1⁄3 cup imitation bacon bits
directions
- Rinse all dry beans.
- Soak all beans overnight or at least 8 hours in cold water.
- Rinse beans.
- Brown hamburger and drain. I also rinse with hot water to remove a little more fat.
- In a large pot bring tomato juice and beans to a boil.
- Reduce to a simmer.
- Add all remaining ingredients.
- Simmer, covered, until desired doneness (3 hours?).

I'm a food junky. I also work very hard to eat a healthy varied diet. Almost every weekend i'll spend several hours experimenting to make a delicious nutritious new handful of recipes. When i'm not cooking i'm looking for the next hiking/camping/ backpacking/kayaking trip to take. I swear I'm solar powered. I have a beautiful dog who accompanies me on nearly all trips. I also have a wonderful husband whome holds down the fort until my return.
My poor hubby does not have a healthy food palate. He provides me plenty of challenge trying to find healthier (but not obviously) savory foods.
