Healthified Marion's Beans 2-23-09

"Logging today’s attempt at healthifying a family's sensational hand down recipe. It’s rich, smoky, a little sweet. Yum Almost all the prep time is soaking and most of cook time is simmering. Not a whole lot of hands on time. I’m guessing on serving amount."

  • Rinse all dry beans.
  • Soak all beans overnight or at least 8 hours in cold water.
  • Rinse beans.
  • Brown hamburger and drain. I also rinse with hot water to remove a little more fat.
  • In a large pot bring tomato juice and beans to a boil.
  • Reduce to a simmer.
  • Add all remaining ingredients.
  • Simmer, covered, until desired doneness (3 hours?).

I'm a food junky. I also work very hard to eat a healthy varied diet. Almost every weekend i'll spend several hours experimenting to make a delicious nutritious new handful of recipes. When i'm not cooking i'm looking for the next hiking/camping/ backpacking/kayaking trip to take. I swear I'm solar powered. I have a beautiful dog who accompanies me on nearly all trips. I also have a wonderful husband whome holds down the fort until my return. My poor hubby does not have a healthy food palate. He provides me plenty of challenge trying to find healthier (but not obviously) savory foods.
