Hazelnut Maple-Rum Apples

- 1⁄2 cup hazelnuts, toasted
- 1⁄4 cup light brown sugar
- 2 tablespoons all-purpose flour
- 2 tablespoons butter
- 1 tablespoon rum (or brandy)
- 3 apples, sliced in half
- 1⁄2 cup apple juice
- 1⁄4 cup rum
- 1⁄3 cup pure maple syrup
directions
- Preheat oven to 375°F
- Coarsely chop nuts.
- Stir sugar with flour and room-temperature butter.
- Mix in 1 tablespoon rum, then nuts.
- Core apples, creating a small cavity.
- Arrange apples, cut-side up, in a glass baking dish just large enough to hold them.
- Mound nut filling in cavities.
- Press down gently.
- Stir apple juice with 1/4 cup rum.
- Pour around apples.
- Drizzle apples with maple syrup. Bake in 375F oven, basting often with pan juices, until tender, about 45 minutes.
- Place on plates and drizzle with juices.

Simply a gem. Made these for an after lunch treat for DS and I to munch on during the football game. I used some rum, and the other ingredients really complimented each other. Loved the brown sugar taste. With all the apple orchards, in the area this is definately a go to recipe, though the supermarkets still sell them. Very flavorful recipe here. :).. Made for PRMR tag
