- 300 milliliters chicken broth
- 1 tablespoon sake
- 1 teaspoon sugar
- 1 teaspoon salt
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch or 1 tablespoon potato starch, mixed with water
- white pepper, to taste
- grated fresh ginger, to taste
directions
- Heat broth in small saucepan.
- Add sake, sugar, salt, soy sauce, and white pepper.
- Just before adding sauce to happosai stir fry, turn off heat; mix water and starch and add to sauce gradually while stirring to thicken; immediately add sauce to stir fry.
- Stir in additional grated fresh ginger to the stir fry just before serving to suit your taste.
