- 6 cups thinly sliced potatoes
- 4 cups cubed 1 inch cooked ham
- 1 cup thinly sliced onion, separated into rings
- 1⁄4 cup butter or 1/4 cup margarine
- 1⁄3 cup all-purpose flour
- 1 teaspoon dry mustard
- 1⁄2 teaspoon pepper
- 2 cups milk
- 3 cups shredded cheddar cheese
- 2 tablespoons chopped fresh chives
directions
- Heat oven to 350 degrees.
- In 13x9 pan layer potatoes, ham and onion.
- In 2 quart saucepan melt butter until sizzling.
- Stir in flour, mustard and pepper.
- Cook over medium heat, stirring constantly, until smooth and bubbly (1 minute).
- Add milk, continue cooking, stirring occasionally, until sauce is thickened (2 to 3 minutes).
- Stir in cheese until melted (3 to 4 minutes).
- Pour sauce over potatoes.
- Sprinkle with chives.
- Bake for 60 to 75 minutes or until bubbly and potatoes are fork tender.

This recipe is fantastic! Exactly what I was looking for, when I went searching for a scalloped potato and ham recipe. Wonderfully creamy with subtle flavors. I added some chives/parsley to each layer of potatoes/ham/onion but otherwise no changes. Loved this, thank you! This is like a delicous, hearty dish you might find at a church dinner.
