  • Preheat oven to 350^.
  • Combine flour, baking powder, salt, and spices in a large bowl. In a separate bowl, mix together sugar, baby food, eggs, oil, and lemon zest. Combine with dry ingredients, mix well. When oven is preheated, toast almonds on cookie sheet for approximately 5 minutes, then toss with batter. Spoon into greased muffin tins, filling 1/2 to 3/4 of the way. Top each muffin with a wedge of apple (or a half wedge if you have a bigger apple). Bake for approximately 25 minutes.
