- 1 cup all-purpose flour
- 1⁄2 cup whole wheat flour
- 2 teaspoons baking soda
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon ground cinnamon
- 1⁄8 teaspoon ground ginger
- 1⁄16 teaspoon ground cloves
- 1 (4 ounce) jar apple baby food
- 1⁄2 cup brown sugar
- 1 egg
- 2 egg whites
- 1⁄3 cup canola oil
- 1 1⁄2 teaspoons vanilla
- 1 lemon, zest of
- 1⁄2 apple, cut into wedges
- 1⁄3 cup slivered almonds (optional)
directions
- Preheat oven to 350^.
- Combine flour, baking powder, salt, and spices in a large bowl. In a separate bowl, mix together sugar, baby food, eggs, oil, and lemon zest. Combine with dry ingredients, mix well. When oven is preheated, toast almonds on cookie sheet for approximately 5 minutes, then toss with batter. Spoon into greased muffin tins, filling 1/2 to 3/4 of the way. Top each muffin with a wedge of apple (or a half wedge if you have a bigger apple). Bake for approximately 25 minutes.
