Grilled Watermelon W/Chevre, Pepitas & Cilantro Vinaigrette

Feel free to use your favorite cilantro vinaigrette but it must be homemade-please!"

  • Whisk together the cilantro-lime vinaigrette in a non-reactive bowl and set aside. Or, use an immersion blender.
  • Cut the watermelon into 3/4" thick triangular slices (like a small slice of pizza.).
  • Use a pastry brush to lightly brush olive oil on each side of the watermelon slices.
  • Grill the watermelon slices on a hot grill for about 2-3 minutes each side or until there are grill marks but the watermelon is still firm and *NOT* mushy!
  • Arrange the slices on a platter.
  • Top each watermelon slice with about 1 tablespoon goat cheese; diced white onion, pepitas and a drizzle of the cilantro vinaigrette.
  • Garnish with a little bit of fresh cilantro.
  • Serve immediately.
