These turned out perfectly. I added a small amount of orange zest (about 1 tsp.) to the dough. The directions say to take 1 teaspoon of dough and roll out but we used 1 tablespoon and ended up with 2 dozen cookies. They tasted great with coffee, too! Reviewed for Veg Tag/April. PS When shaping the dough, handle it as little as possible. The more it's handled, the more difficult it is to shape.

Excellent recipe! You can't sub in margarine for the butter though. They don't roll out like they are supposed to then. They tend to fall apart too much. I baked the dough anyways. (Why be wasteful?) I rolled mine into balls and pressed them down with a fork on the top like you would do to a peanut butter cookie. They tasted WONDERFUL. If they taste this good when I mess them up, they will taste AMAZING when I make them properly! I will make these again with real butter! My fiance's comment was "These have Christmas written all over them!" Thanks Rita! **UPDATE** Finally made these with butter! And then I burnt all but 6 cookies! Those 6 were amazing! The dough was lovely to work with. It was delicate but not impossible. I am determined to make these right. I will try again.
