Greek Couscous Salad

ingredients
- 1 (5 5/8 ounce) box garlic and herb couscous mix
- 3⁄4 cup chickpeas, rinsed
- 1 cucumber, diced & seeded
- 1 medium tomatoes, diced
- 1⁄2 cup feta cheese
- 1⁄2 cup sliced ripe olives
- 3 green onions, sliced
- 1⁄2 teaspoon garlic powder
- 1⁄2 teaspoon dried mint
- 1⁄2 teaspoon all purpose Greek seasoning
- 1 tablespoon lemon juice
- 1⁄2 cup Greek salad dressing
directions
- Cook couscous according to package directions, except omit the butter amount. Let cool & then add all other ingredients. Allow to chill in refrigerator for a couple hours before serving.
