Grandma's Lemon Meringue Pie

"This is a recipe for Lemon Meringue pie that I found on allrecipes.com and it is absolutely wonderful! all the pies that I made before would either have a too soft filling or a rubbery filling but this one is just perfect. It's become my dads favorite :)"

  • Preheat oven to 350 degrees F (175 degrees C).
  • To Make Lemon Filling: In a medium saucepan, whisk together 1 cup sugar, flour, cornstarch, and salt. Stir in water, lemon juice and lemon zest. Cook over medium-high heat, stirring frequently, until mixture comes to a boil. Stir in butter. Place egg yolks in a small bowl and gradually whisk in 1/2 cup of hot sugar mixture. Whisk egg yolk mixture back into remaining sugar mixture. Bring to a boil and continue to cook while stirring constantly until thick. Remove from heat. Pour filling into baked pastry shell.
  • To Make Meringue: In a large glass or metal bowl, whip egg whites until foamy. Add sugar gradually, and continue to whip until stiff peaks form. Spread meringue over pie, sealing the edges at the crust.
  • Bake in preheated oven for 10 minutes, or until meringue is golden brown.

  1. Nisa, this was my first time making a Lemon Meringue Pie, and I must say it turned out beautifully. I shared this pie with some friends from church and they now want your recipe. One of the men in our Church group asked me out ,he said if I can bake I can cook. Well at least I can try, right?? LOL!! He was very impressed with this pie. After living in the Bahamas for 4 years I've finally moved back to Malaysia with my mom and dad and brothers and sisters. We've just moved into our newly renovated house but alas! the oven is not working, and I'm just dying to start baking! I love cooking, baking especially, not because i love to eat the stuff I make (I dont) but because I just love the rush it gives me and I love to see the results and of course.....nothing feels better than to see people enjoying your cooking!
