- 1 cup quick-cooking oats
- 1 cup shredded wheat cereal, spoon size
- 1 cup walnuts
- 1 1⁄2 cups raisins
- 1⁄2 teaspoon ground cinnamon
- 1⁄2 teaspoon salt
- 2 eggs, large
- 1⁄4 cup honey
- 1 teaspoon vanilla extract
- 1⁄4 cup chocolate chips, mini
directions
- Preheat oven to 350 degrees.
- Lightly coat an 8 x 8 inch baking pan with nonstick cooking spray.
- Place oats, shredded wheat, walnuts, raisins, cinnamon and salt in the bowl of a food processor fitted with a steel blade; pulse until mixture resembles dries peas. Set aside.
- In a large bowl, whisk together eggs, honey, and vanilla until well blended.
- Add oat mixture and chocolate chips; stir to combine.
- Spread mixture evenly in prepared 8 x 8 pan.
- Bake at 350 degrees for about 18 - 20 minutes, or until golden brown.
- Cool completely in pan before cutting.
